Snail caviar
Snail caviar is a unique and exclusive delicacy that was first conceived of by a French couple, who founded the De Jaeger Company to market these tiny pearls. The eggs are gathered, cleaned and sorted by hand. In their raw state, the eggs have a brittle, slippery shell that bursts on the palate into a bloom of subtle flavor.
